Description
Nathalie and Gilles Fevre made this Chablis Premier Cru Fourchaume from Chardonnay in Burgundy, farming a family estate they have long tended. Chablis sits on Kimmeridgian soils, a mix of limestone and clay packed with tiny fossil oyster shells, and Fourchaume is one of the best regarded Premier Cru slopes for the way it ripens fruit while holding minerality. The cool, northern climate keeps acidity high and the fruit taut, which is the signature of the appellation. This wine saw no oak, resting in stainless steel so the fruit and the stony character come through cleanly, with fermentation kept cool to hold aromatic detail. Where malolactic fermentation runs it takes the hardest edge off the acidity without adding weight. The colour is pale gold with a faint green tint. The nose is lemon, green apple and citrus peel with chamomile and white flowers, and the palate is dry, tight and saline, with a chalky, wet stone minerality and a long, bracing finish. Serve at 10 to 12 degrees in a white wine glass.
