Description
Domaine Michel Noëllat is a family estate in Burgundy dating to the 19th century, based in the Côte de Nuits and here bottling a regional Bourgogne Pinot Noir. Burgundy has a cool continental climate where Pinot Noir ripens slowly and keeps the bright acidity and delicacy the grape is known for. The region's limestone and clay-marl soils are central to its wines, giving Pinot Noir freshness, a fine structure and an earthy, savoury depth. The fruit is aged for 12 months in French oak barrels, a mix that softens tannin through slow oxygen exchange and adds a light spice frame without dominating the fruit, while malolactic fermentation rounds the palate and settles the acidity. The colour is a bright, translucent ruby. The nose shows cherry and red berries with a floral rose note over damp earth and dried herbs. The palate is light to medium bodied and fresh, with fine tannin, a savoury earthy character and a clean finish. Serve at 15 to 16 degrees. It is a classic, versatile red for duck, poultry and mushroom dishes.
