Description
Domaine Matrot is a Meursault estate in the Cote de Beaune, founded in 1914 and reshaped when the third generation took over in 1976. Thierry and Pascale Matrot farm their 18 hectares under lutte raisonnee, avoiding chemical treatments and working the vineyards with a light hand. This regional Bourgogne Chardonnay draws on the same clay and limestone soils that run through the Cote de Beaune, cool marl subsoils that hold water and lend white Burgundy its firm mineral spine. The Chardonnay is fermented and aged in barrel, where slow contact with the lees and a measured exchange of oxygen through the wood build texture and a light nutty depth without covering the fruit. Partial malolactic fermentation softens the sharper malic acidity into something rounder. The wine is pale gold. The nose combines white peach and lemon with hazelnut and a touch of vanilla, and the palate is medium bodied and creamy, with honeyed weight balanced by fresh acidity through a clean finish. Serve at 10 to 12 degrees in a broad white glass. It suits roast chicken, white fish in a butter sauce and hard nutty cheeses such as Comte or Gruyere.
