Description
Domaine Leflaive, founded in 1917, is among the most respected white wine estates on the Côte d'Or and holds the largest share of the Clavoillon Premier Cru in Puligny-Montrachet. The estate has farmed biodynamically since the 1990s, working the soils by hand and with natural preparations to express each parcel. Clavoillon lies on the classic Puligny bedrock of hard limestone under shallow clay, a stony, well-drained site that gives Chardonnay tension and a saline mineral drive. The grapes are pressed gently and fermented with native yeasts, then aged for twelve months in French oak, a portion of it new. Ageing on fine lees, with slow oxygen exchange through the barrel, builds a creamy weight and a layer of toasted, nutty complexity while malolactic conversion rounds the acidity. The wine is bright pale gold. The nose is refined, with lemon, white peach and white flowers over hazelnut, beeswax and a light toast, and the palate is concentrated yet precise, the citrus and stonefruit fruit set on a firm mineral line that runs into a long, saline finish. Serve at 12 to 14 degrees in a white Burgundy glass.







Additional information
This is a wine for lobster or crab in butter, baked turbot or monkfish, and chicken or poultry in a cream sauce. The mineral drive and nutty depth also flatter a fine hard cheese such as Comté.
