Description
Domaine Leflaive is considered one of the finest white wine cellars on the Côte d'Or, based in Puligny-Montrachet and farmed biodynamically. This Bourgogne Blanc is drawn from Chardonnay grown on limestone-rich soils around the estate's Côte de Beaune holdings, made with the same care as the grander wines but from younger vines and broader parcels. The clay and limestone base gives the fruit citrus freshness and a chalky cut, while the region's cool nights protect its acidity. The grapes are pressed and fermented with native yeasts, then aged for twelve months in French oak. Lees ageing and slow oxygen exchange through the barrel add a creamy texture and a light nutty depth, and malolactic conversion softens the acidity into a rounder shape, though the wine keeps its Burgundian tension. It is pale straw gold. The nose shows lemon, green apple and white peach over white flowers and a touch of vanilla, and the palate is medium bodied and fresh, the fruit framed by a gentle oak creaminess and a clean, hazelnut-edged finish. Serve at 11 to 13 degrees in a white wine glass.

Additional information
An easy match for roast chicken, grilled white fish and shellfish such as crab or prawns. The oak-fed texture also suits a wedge of hard nutty cheese, and it makes a good all-purpose white for a fish supper.
