Description
Domaine Lafage is a family estate on the outskirts of Perpignan in Roussillon, farming organically across a patchwork of Mediterranean vineyards influenced by the sea and the nearby mountains. Lafabuleuse is a lightly sparkling white, a frizzant style built for freshness, blending Garnacha Blanca and Rolle for structure with Moscatel de Alejandria and Viognier for aromatics. The warm, dry climate ripens the Muscat and Viognier to give the wine its floral, grapey character, while cool nights preserve acidity. A gentle secondary fermentation leaves a soft, delicate bead rather than a full mousse, and the low alcohol of 10.5 percent keeps everything light on the palate. It pours pale and bright, with a fragrant nose of white peach, apricot and elderflower over orange blossom and melon. The palate is off dry and gently frothy, with ripe stone fruit balanced by fresh citrus acidity and a clean, refreshing close. Serve it well chilled at around 7 to 9 degrees as an aperitif or with light food.
