Jonathan Pabiot is the fifth generation to run his family domaine at Les Loges in the Loire Valley, and this Léon is an AOC Pouilly Fumé made from Sauvignon Blanc. The vineyards are farmed organically and biodynamically across 20 hectares. Pouilly Fumé sits on the flint-rich soils of the eastern Loire, and the local silex is what gives these wines their smoky, gunflint character alongside the grape's citrus and greenness. The continental climate and cool nights keep the fruit fresh and precise. Fermentation and ageing in stainless steel and concrete tanks, with no oak, preserve the wine's clarity and mineral drive. The colour is pale straw with green glints. The nose shows lemon, grapefruit and gooseberry, with a smoky, flinty note and a green, herbal edge. The palate is dry and taut, with citrus and stone fruit carried by sharp acidity and a long, stony, saline finish. This is a precise, mineral white with real tension. Serve it at 9 to 11 degrees in a white wine glass.
