Description
Domaine Fumey Chatelain farms in Montigny-lès-Arsures, in the Jura appellation of Arbois, where Raphaël Fumey and Adeline Chatelain built their estate after a 1991 frost forced them to start vinifying their own fruit. Chardonnay is long established in the Jura, planted here on the region's grey marl and limestone soils, which give the wine its firm acidity and mineral spine. The cool continental climate makes for a long, slow ripening season and a wine of 12.5% alcohol. Ageing runs to eighteen months in foudres, large old oak casks that are kept topped up, so the wine develops texture and a gentle nutty complexity from lees contact and slow oxygen exchange rather than the pronounced oxidative character of the region's sous voile whites. The colour is bright gold. The nose combines green apple and lemon with hazelnut, almond and a note of toasted bread, and the palate is broad and savoury, carrying a beeswax richness over a taut, saline finish. Serve at 11 to 12 degrees in a white Burgundy glass.







Additional information
Serve with roast chicken or a creamy chicken fricassée, where the wine's texture and nutty depth come into their own. It also suits baked salmon and mushroom dishes, and follows Jura tradition beautifully alongside a well-aged Comté or other hard mountain cheese.
