Description
Morgat Fides is made by Eric Morgat in Savennieres, one of the Loire's benchmark appellations for dry Chenin Blanc, here bottled under Anjou. The wine is a blend of four plots, Enclos, Clos Ferrand, Clos de la Pierre Becherelle and La Roche aux Moines, whose schist and volcanic soils give Savennieres its firm structure and mineral drive. Chenin Blanc is a naturally high acid grape that can also carry weight, and Morgat farms it organically and ages it in barrel, where the wood and extended lees contact build a creamy texture and a savoury depth without erasing the wine's tension. The result, as the source describes, is a white that is creamy, balanced and powerful. The colour is a bright gold, and the nose is fresh and complex, with white peach, lemon, beeswax, white flowers and a clear lift of aromatic herbs such as mint, verbena and tarragon over a hint of fennel spice. The palate is dry, full and firm, with a long mineral finish that will reward a few years in the cellar. Serve at 11 to 13 degrees, ideally decanted, in a large glass.

Additional information
Pour it with turbot or monkfish in a butter sauce, roast chicken or pork with apple, where the weight and herbal lift come into their own. The firm acidity also cuts richer cheese, so try it with aged Comte or a mature cheddar. Give young bottles a short decant.
