Description
Domaine du Mortier is the project of the Boisard brothers in the Loire, who farm biodynamically and make natural wines with minimal intervention. Brain de Folie Rouge blends Cabernet Franc with Grolleau, a light, high-yielding Loire grape that keeps the wine fresh and low in alcohol at 12 percent. Biodynamic farming works the vineyard as a single living system, avoiding synthetic treatments, while the natural approach in the cellar means little or no added sulphur and native-yeast fermentation. Ageing takes place over four months in stainless steel, an inert vessel that adds nothing of its own and locks in the bright fruit, herbal character and freshness of the grapes; Cabernet Franc's leafy, red-fruited profile comes through clearly without any oak overlay. Expect a bright, translucent ruby colour, a nose of wild red berries and redcurrant with smoky herbs and a mineral undertone, and a supple, light-bodied palate with crunchy acidity, fine tannins and a savoury finish. This is a red that can take a light chill. Serve at 13 to 15 degrees, with lighter meats, charcuterie or vegetable dishes.
