Description
Domaine du Mortier is run by brothers Cyril and Fabien Boisard, who farm this Chenin Blanc biodynamically in the Loire and bottle it as a natural wine under the Vin de France label. Chenin on the Loire's tuffeau and clay soils holds high natural acidity, and the cool continental climate with a wide day to night temperature swing preserves aromatic freshness and slows ripening. The wine spends six months in concrete tanks rather than oak, a neutral material that lets the fruit and mineral character lead while the tank mass gives a rounder texture than steel. No new wood means no vanilla or toast, so the grape and the site stay in front. Working without added yeast or fining keeps a faint savoury, herbaceous grip. It pours pale straw green. The nose is white orchard fruit, lemon and citrus peel with a herbal, chamomile lift. The palate is crisp and taut, apple and pear carried on firm acidity, closing dry and chalky. Serve at 9 to 11 degrees in a white wine glass.

Serve with oysters, moules or grilled sea bass, where the bright acidity works like a squeeze of lemon. It also suits fresh goat cheese and green salads with a sharp dressing, and holds up to lightly herbed vegetable dishes.
