Description
Patrick and Sophie Ligeron founded Domaine des Carlines in the Cotes du Jura, in eastern France, after a long search for the right vineyard. Voile is made from Chardonnay and Savagnin and aged in the region's traditional oxidative way. The wine rests in barrel for two years under a veil of native yeast, the voile or flor, which forms on the surface and is not topped up. The flor feeds on the wine and shields it from full oxidation while slowly converting alcohol into acetaldehyde, the compound behind the style's apple and nutty character. Savagnin gives the blend its firm acidity and its affinity for this ageing. The Jura's cool climate and clay-limestone marl soils keep the base wine taut, which matters under the slow oxidative development. The colour is deep straw-yellow. The nose leads with walnut, almond and dried apricot, with a spiced, gingery note from the flor. The palate is dry, savoury and saline, with green apple acidity and an umami depth that lingers. Serve at 12 to 14 degrees in a broader glass.

This is the regional match for Comte and other hard nutty cheeses. It also suits roast chicken, white fish in cream, and mushroom dishes, where the savoury, oxidative character finds an echo.
