Description
Domaine d'Eole sits at the foot of the Massif des Alpilles in the Bouches-du-Rhône, working within AOC Côtes de Provence under the influence of the Rhône. The estate has farmed organically since 1996, and deliberately low yields of around 30 hectolitres per hectare give concentrated, balanced fruit. The blend brings together Grenache, Cinsault, Syrah and Mourvèdre, a classic southern Rhône set that suits the warm, dry Provençal climate and the scrubland garrigue that surrounds the vines. The wine is made in the pale Provence style, with brief skin contact to draw a delicate colour before a cool fermentation that protects the fresh aromatics. The result is pale salmon pink, with a nose of redcurrant and wild strawberry, white peach and a wash of dried Mediterranean herbs. The palate is dry and crisp, with bright acidity, a saline mineral thread and a clean, savoury finish. Serve well chilled at 8 to 10 degrees in a white wine glass. It works as an aperitif and carries easily through a meal, suiting grilled prawns, sea bass and herb-dressed salads.
