Description
Domaine d'Eole Blanc is a white from the Alpilles in Provence, made by Domaine d'Eole from Grenache Blanc and Vermentino. The estate farms organically, with controlled yields and minimal intervention in vineyard and cellar. The Alpilles sit inland from the coast, where hot days and cooler nights, along with the drying mistral wind, keep the grapes healthy and hold on to acidity. Grenache Blanc brings weight and orchard fruit, while Vermentino adds citrus lift and a herbal, saline edge. After a gentle pressing, the wine is fermented and then aged on its fine lees, which are stirred to build texture and a creamy weight without the need for new oak. The lees also add a savoury, almost briny depth that suits the Mediterranean setting. Expect a pale gold colour and a nose of white peach, melon and thyme with a note of white flowers. The palate is dry and rounded, medium bodied, with stone fruit, a saline mineral streak and a herbal finish. Serve at 10 to 12 degrees.
