Description
Domaine de Villaine was founded in 1971 by Aubert de Villaine, long associated with Domaine de la Romanée-Conti, and his wife Pamela at Bouzeron in the Côte Chalonnaise. This Bourgogne Rouge is made from Pinot Noir, the red grape of Burgundy, farmed organically on the limestone and clay soils that define the region. Pinot Noir is thin-skinned and sensitive to site, and Burgundy's cool continental climate ripens it slowly, holding the high acidity and delicate aromatics that mark the variety. The wine is aged in oak barrels, where measured oxygen exchange softens the tannins and adds a light spice frame while keeping the fruit fresh and transparent. It is a bright, medium ruby, showing raspberry, redcurrant and red cherry, a floral, rose-petal lift and a gentle, earthy minerality. The palate is medium bodied and fresh, with silky, fine-grained tannin and a savoury, persistent finish. Serve at 15 to 16 degrees, in a wide glass. It is a versatile match for poultry, game birds and mushroom dishes.
