Description
Domaine de Villaine farms this regional Bourgogne at Bouzeron in the Côte Chalonnaise, in the south of Beaune. The vines sit on slopes between roughly 270 and 350 metres above sea level, on poor soils with a high limestone content, and have been certified organic for many years. The estate works to ripen the fruit fully while keeping the vines healthy, avoiding chemical treatment in the vineyard. The high limestone and cool, elevated sites give this Pinot Noir its fresh acidity and light, transparent style, made for early drinking rather than long ageing. Vinification is gentle and traditional, with a short élevage that keeps the fruit bright and the tannin soft. The wine is pale to medium ruby, with strawberry, wild raspberry and red cherry on the nose over rose and a light earthy note. The palate is light-bodied and fresh, with crisp acidity, delicate tannin and a clean red-fruit finish. This is an easygoing village-level Burgundy that shows the estate's precision at an accessible weight. Serve lightly cool at 14 to 15 degrees, in a Burgundy glass. It pairs with roast chicken, charcuterie, salmon and mushroom dishes.
