Domaine de Severin is a Guadeloupe estate working in the agricole tradition, distilling from fresh pressed cane juice on a column still. This XO is bottled at six years, an unfussy aged expression that leans on oak and gentle fruit rather than the grassy intensity of a young blanc, sitting comfortably at 45%.
Matured in ex bourbon wood, it shows vanilla, prunes and a cognac like roundness on the nose, with banana, citrus and soft spice on the palate and a finish carrying light tobacco, leather and cocoa. It comes across as woody and softly sweet from the barrel, easy to follow and undemanding, the kind of everyday agricole that asks little of the drinker.
