Description
Domaine de Severin is a Guadeloupe estate distilling from fresh-pressed sugar-cane juice, and this six-year expression sits under the island's IGP. Six years in ex-bourbon oak puts it in lightly aged territory, enough to add colour and wood without erasing the cane.
The nose mixes liquorice and vanilla with a solvent, barrel-driven edge, while the palate brings grass, liquorice, sugar-cane and a touch of honey. The grassy agricole backbone is still clearly present beneath the wood. Bottled at 45%, it is a rustic, traditional Guadeloupe rum rather than a polished modern release, showing the straightforward character of a small-estate cane-juice spirit at a modest age, best enjoyed neat or in a longer agricole serve.
