Domaine de Pallus makes this biodynamic Chinon from Cabernet Franc in the Loire Valley. Eighteen months in barrel give blackcurrant and raspberry fruit, a savoury, peppery edge and the fresh, earthy structure typical of the grape.
Description
La Rougerie is a Chinon from Domaine de Pallus in the Loire Valley, made entirely from Cabernet Franc and farmed biodynamically. Chinon sits along the Vienne, and its vineyards range across gravel and sand on the lower terraces and clay and limestone on the slopes, soils that give the grape a savoury, structured character rather than the softer fruit of warmer regions. The cooler Loire climate keeps acidity high and brings out Cabernet Franc's herbal, peppery side. After fermentation the wine is aged eighteen months in barrel, where malolactic conversion lowers the acidity and the slow oxygen exchange of oak rounds the tannins and adds a light spice. The 2019 is deep ruby, with aromas of blackcurrant and raspberry over black pepper, dried herbs and a clear earthy note. The palate is fresh and savoury, with red fruit, fine grained tannin and a long, mineral finish. Serve at 15 to 17 degrees and serve slightly cool in warm weather. It suits beef, game and mushroom dishes.
