Domaine de Pallus La Croix Boissee is a Cabernet Franc from AOC Chinon in the Loire, farmed biodynamically. From a top plot, it is savoury and structured, with red currant, cherry, dried herbs and a leafy, earthy edge.
Description
Domaine de Pallus sits in the Loire Valley within AOC Chinon, with around 12 hectares of vineyard. La Croix Boissee is a single-plot Cabernet Franc, the Loire's signature red grape, which here gives the savoury, leafy and red-fruited character that defines fine Chinon. The estate farms biodynamically, working the soils, which combine clay, limestone and gravel over the slope, to express the site, while the cool, river-moderated continental climate keeps acidity firm and the aromatics fresh. After fermentation on the skins to build structure, the wine ages for around 18 months in barrel, where slow oxygen exchange softens Cabernet Franc's tannins and adds a fine frame and tertiary depth without overwhelming the fruit. The colour is deep garnet. The nose shows red currant and cherry with tomato leaf, dried herbs and a tobacco edge. The palate is medium to full bodied, with firm but fine tannins, bright acidity and a savoury, earthy finish. Serve at 16 to 17 degrees and decant. It pairs well with roast and grilled meat.
