This Savagnin comes from Domaine de Montbourgeau in L’Étoile, aged thirty-six months on its lees in barrel. The long ageing gives intense hazelnut and almond over green apple, with a waxy texture and a savoury, saline finish.

Description
Domaine de Montbourgeau is a fourth-generation estate in the Jura village of L'Étoile, whose marl and limestone soils carry starfish fossils that give the wines their salinity. Savagnin is the region's signature white grape, thick-skinned and late-ripening, and here it is farmed organically and aged for thirty-six months on its lees in barrel. That long period of lees contact, combined with the slow oxygen exchange through the wood, builds the nutty, savoury character for which Jura Savagnin is known, while the lees release mannoproteins that add a waxy, coating texture. The extended ageing also concentrates the wine and lends complexity without the need for new oak. The colour is deep gold. The nose is intense and gives hazelnut, almond and walnut over green apple and dried apricot. The palate is dry and full, with a beeswax texture, real umami depth, firm acidity and a long saline finish. At 14.5 percent this is a substantial, gastronomic white. Serve at 12 to 13 degrees, ideally with a little air.







Additional information
The nutty, oxidative character is a classic match for Comté and other aged hard cheeses. It also suits roast chicken and pork in creamy or mushroom sauces, and richer white fish such as monkfish. Try it with chicken in a vin jaune and morel sauce.
