Description
Domaine de la Tournelle is a reference for natural Jura wine, and Uva Arbosiana is its single-variety Poulsard, also known locally as Ploussard, from the AOC Arbois-Pupillin. The grapes grow on early Jurassic grey marl soils and are picked by hand, then destemmed in the vineyard so the berries arrive whole. Those whole berries are placed uncrushed in open cylindrical vats and saturated with carbon dioxide, a carbonic maceration carried out without added sulphites. That method ferments inside the intact berry, which builds bright, fragrant red fruit and keeps tannin low, while the cool marl soils hold the acidity high. Farming is biodynamic and organic. The colour is a pale, luminous ruby. The nose is lifted and floral, with red berries, cherry, rose and a light earthy note. The palate is light and juicy, with soft tannins, fresh red-currant acidity and a clean, peppery finish. Serve at 13 to 14 degrees, with a light chill to sharpen the fruit. It suits roast poultry, salmon and lighter pork dishes.
