Description
Trousseau des Corvées is a varietal Trousseau from Domaine de la Tournelle in the AOC Arbois-Pupillin in the Jura. The fruit comes from a south-facing plot of mostly gravel sitting over shallow Jurassic grey marl, a combination that gives free drainage and warmth for this late-ripening, thin-skinned variety while the marl lends a savoury mineral grip. The grapes are picked by hand into small crates and destemmed by hand in the vineyard. Farming is biodynamic and the wine is made as a natural, vegan bottling. After a light crush and maceration, it is aged twelve months in used French oak, where seasoned barrels allow gentle oxygen exchange and integration without adding new wood flavour, keeping the focus on the variety. The colour is a pale translucent ruby. The nose is fragrant and savoury, with redcurrant, wild cherry, dried herbs and an earthy, almost forest-floor note. The palate is light bodied and fresh, with fine tannins, bright acidity and a long, slightly saline finish. Serve at 14 to 15 degrees, lightly chilled. It suits roast chicken, game birds and pork.
