Description
Domaine de la Pinte farms 34 hectares around Arbois and Pupillin in the Jura, planted mainly on blue marl at around 400 metres, and has worked organically since 1999 and biodynamically since 2009. This is Savagnin, the region's signature white grape, in the traditional Jura manner. The wine is aged in barrel under a veil of yeast known as the voile, where the surface film protects the wine while allowing slow, controlled oxidation. That contact with air converts alcohol into acetaldehyde and related compounds, giving the nutty, savoury, faintly curry-like character that defines oxidative Jura whites, while the yeast film adds a saline, umami depth. The blue-marl soil and cool climate keep a firm acidity beneath the developed flavours. The colour is deep gold. The nose is complex and savoury, with walnut, almond, dried apricot and beeswax over a green-apple freshness. The palate is dry, textured and long, the oxidative notes balanced by high acidity and a saline finish. This is a distinctive, food-driven style rather than a fruity aperitif. Serve at 12 to 14 degrees.
