Description
Domaine de la Pinte is a family estate with 34 hectares planted mainly on blue marl at about 400 metres above sea level around Arbois and Pupillin, in the Jura. The vineyards have been farmed organically since 1999 and biodynamically since 2009. Blue marl is a cool, clay rich soil that retains water and slows ripening, giving Jura Chardonnay firm acidity and a stony, savoury tension at moderate altitude. The wine spends ten months in barrel, where slow oxygen exchange through the wood builds texture and nutty complexity, while ageing on the lees adds body and a fine mealy character. The result sits between the fresh and the oxidative Jura styles. The colour is bright straw gold. The nose leads with green apple and lemon, then hazelnut, almond, beeswax and a light toasted note from the barrel. The palate is textured and dry, the acidity keeping it taut, with a long savoury, saline finish. Serve at 11 to 12 degrees in a white wine glass.

Additional information
A regional match for Comté and other hard nutty cheeses, and for the Jura classic of chicken in a cream and morel sauce. The barrel texture and acidity also suit roast poultry, monkfish or a mushroom risotto. Serve it slightly cooler than a warm room to keep the finish fresh.
