L’Esprit de Chevalier is the second red of Domaine de Chevalier in Pessac-Léognan, grown on the gravel soils of the Graves. A Cabernet Sauvignon and Merlot blend with Petit Verdot, aged eighteen months in barrel, it shows red currant, plum and a fine cedar and tobacco frame.

Description
L'Esprit de Chevalier is made by Domaine de Chevalier in Pessac-Léognan, from vineyards on the terroir of the Graves. The soil here is largely gravel, deposited by the Garonne over deep geological time, and it drives the wine's character: free-draining so the vine is not left in wet ground, and heat-retaining so it warms the roots and helps ripen Cabernet Sauvignon evenly. This is the estate's second red, a blend led by Cabernet Sauvignon with Merlot and a little Petit Verdot, farmed sustainably. It is aged eighteen months in barrel, where measured oxygen exchange through the wood integrates the tannins and layers in cedar and spice, while malolactic fermentation rounds the bright acidity of the cooler 2023 season. The wine is deep ruby, with concentrated aromas of blackberry, plum and red currant over tobacco, cocoa and a note of thyme. The palate is savoury and structured, the tannins firm and fine, closing on a long, gravelly finish. Serve at 17 to 18 degrees and decant ahead of pouring. A good match for lamb, beef and game birds.
