Description
Domaine de Chevalier is a leading estate in Pessac-Leognan, the Graves district south of the city of Bordeaux and the source of the region's finest dry whites. The blend of Sauvignon Blanc and Semillon grows on deep gravel soils laid down by ancient rivers, stony ground that drains freely and reflects warmth back into the canopy, ripening the fruit while the pine forest around the estate cools the nights and preserves acidity. The wine is fermented in barrel and aged sixteen months on its fine lees, which are stirred to release mannoproteins that give the wine its creamy weight and integrate the oak. Sauvignon Blanc supplies the citrus lift and aromatic drive, Semillon the body and the capacity to age. The colour is bright yellow. The nose opens with jasmine and white flowers over white peach, lemon and citrus peel, with a light vanilla and almond note from the oak. The palate is full and textured but held taut by fresh acidity, closing long and mineral. Serve at 11 to 13 degrees, and decant a young bottle.







Additional information
Pour it with roast chicken, lobster or richer fish such as monkfish, where the creamy lees texture matches the dish. It also stands up to hard nutty cheeses like aged Gruyere.
