Description
Domaine de Bellivière was founded in 1995 by Christine and Eric Nicolas in the Loire Valley, farming 13 hectares across several sites with certified organic and biodynamic methods and a wide range of soils. Calligramme is a dry Chenin Blanc from the small Jasnières appellation, whose flinty clay and limestone soils give the wine a firm acidity and a stony mineral cut that define the style. Chenin ripens slowly in this cool northern climate, holding its natural acidity, which is what allows the grape to age so well. The wine is fermented and matured in barrel, where slow oxygen exchange through the wood and extended lees contact build texture, a light nuttiness and a honeyed depth while keeping the fruit taut rather than sweet. The 2020 is bright gold with a nose of green apple, white peach and honey over beeswax and citrus peel. The palate is dry and structured, with a waxy texture and an almond note, carried by a long, mineral, faintly saline finish. Serve at 11 to 13 degrees in a white glass, ideally with a little air.

The texture and acidity suit roast and baked white fish, roast chicken and pork with apple. It also stands up to hard, nutty cheeses such as Comté, and to creamy vegetable gratins.
