Description
Domaine Chantal Lescure is an organically farmed Burgundy estate, and Les Vignots is a lieu-dit on the slopes of Pommard in the Côte de Beaune. Pommard is known for its iron-rich clay and limestone soils, which give Pinot Noir a deeper colour, more body and firmer tannins than the lighter communes nearby. The continental climate, with warm days and cool nights, ripens the fruit while preserving the acidity that keeps the wine fresh. Fermentation runs on indigenous yeasts, after which the wine ages for twelve months in oak barrels. This élevage softens the tannins through gentle oxygen exchange and adds a light clove and woodspice, while malolactic conversion rounds the acidity into a smoother texture. The estate aims for balance between delicacy and strength, and the result is a Pommard that drinks well young yet has the structure to age. The colour is a deep ruby. The nose shows red and black cherry, plum and damp earth. The palate is medium to full bodied, with ripe tannins, a savoury core and a clean, mineral finish. Serve at 16 degrees, decanted briefly, with red meat or game.
