Description
Domaine Chantal Lescure works organically in Burgundy, and this Pommard comes from the Les Vaumuriens lieu-dit, a limestone slope on the higher part of the commune that many consider of Premier Cru standard. Pommard's iron-rich clay and limestone soils give Pinot Noir more colour, body and grip than the lighter communes around it, while the elevation of Les Vaumuriens brings extra freshness and a mineral lift. The continental climate, with warm days and cool nights, ripens the fruit while preserving acidity. Fermentation is carried out with native yeasts, and the wine then spends eighteen months in oak barrels. This long élevage allows the tannins to soften through slow oxygen exchange and adds gentle spice, while malolactic conversion smooths the acidity into a rounder texture. The colour is a deep ruby. The nose shows dark cherry, plum and red currant over damp earth and a peppery edge. The palate is medium to full bodied with structured, ripe tannins, a savoury core and a long, stony finish. Serve at 16 degrees, decanted briefly. It suits red meat, game birds and earthy dishes.
