Description
Domaine Bonnardot has made wine in Burgundy for generations and now works biodynamically, following the low-intervention principles of Jules Chauvet. This Santenay comes from Pinot Noir grown at the southern end of the Côte de Beaune, on limestone and marl soils that drain freely and give the grape its characteristic mineral, savoury edge. Burgundy's cool continental climate ripens Pinot Noir slowly, preserving the high acidity and delicate red fruit the region is known for. The biodynamic farming and minimal cellar handling aim to carry the site's character through unmasked. The wine ages 14 months in oak, where gentle oxygen exchange softens the light tannins and adds a subtle savoury frame without dominating the fruit. The colour is pale to medium ruby. The nose shows red cherry, raspberry and redcurrant over earth, dried rose and a forest-floor note. The palate is medium-bodied, with bright acidity, fine silky tannins and an earthy, savoury finish. Serve at 14 to 16 degrees, in a wide glass. It is a classic match for roast poultry, game birds and mushroom dishes.
