Domaine Bonnardot makes this Pommard from Pinot Noir in one of Burgundy’s most renowned red appellations. A biodynamic, natural-leaning wine aged fourteen months in oak, it shows red cherry, forest floor and a fine, earthy structure.
Description
Domaine Bonnardot is a Burgundian family estate with roots reaching back to 1470, farming plots across eighteen appellations of the Côte-d'Or, among them Pommard, one of the region's most renowned and structured red appellations. This wine is Pinot Noir, the grape of red Burgundy, grown on the limestone and clay soils of Pommard that the appellation is known to give its sturdier, more tannic character. Ludovic and Emilien Bonnardot farm biodynamically and work in a natural-leaning style with minimal intervention, while the cool continental climate and the calcareous soils hold the bright acidity and aromatic lift that define fine Pinot Noir. After fermentation the wine ages fourteen months in oak barrels, where slow oxygen exchange through the wood softens the tannins and builds savoury, earthy complexity without overpowering the delicate fruit. The colour is bright, medium ruby. The nose leads with red cherry and berries over rose, forest floor and damp earth. The palate is elegant and structured for a village Pommard, with fine tannins, fresh acidity and a long, savoury finish. Serve at 15 to 16 degrees, decanting briefly, with roast duck, game birds, poultry or mushroom dishes.
