Description
Domaine Bonnardot farms biodynamically in Burgundy, and this wine comes from the Hautes-Côtes de Beaune, the cooler high ground rising directly behind the famous Côte d'Or slopes. The higher altitude means a longer, slower ripening season, so the Pinot Noir keeps bright acidity and a fresh, red-fruited profile rather than heavy ripeness. The limestone-based soils drain freely and lend the wine a mineral, savoury character. The family's low-intervention approach extends to ageing in large 10,000 litre foudres; the big format gives a low ratio of wood to wine, so the oak adds almost no flavour while slow oxygen exchange rounds the tannins and preserves the pure fruit. The colour is bright, pale to medium ruby. The nose shows red cherry, raspberry and redcurrant over earth, dried herbs and a floral note. The palate is light to medium, with crisp acidity, fine tannins and a clean, earthy finish. Serve at 14 to 16 degrees, in a wide glass, and it can take a light chill in warm weather. It suits poultry, game birds and earthy vegetable dishes.
