Description
Domaine Bobinet was established at Beaulieu in the Saumur region by Emeline and Sebastien, who farm organically and by biodynamic methods, with Sebastien the seventh generation of a winegrowing family. This Chenin Blanc is picked young and raised for four months in stainless steel, a reductive vessel that locks in primary fruit and keeps the wine crisp and precise. The Saumur soils are limestone and tuffeau, which give Chenin its high natural acidity and a saline, stony backbone, while the cool Loire climate with a marked day to night temperature range protects aromatics and holds the fruit in an early drinking, energetic register. Because there is no oak and no extended ageing, the wine shows the grape and the vintage rather than cellar character, with only the short steel rest to settle it. It pours pale lemon with a green tint. The nose is green apple, lemon and white spring flowers. The palate is light and taut, apple and pear on a lean, mineral line, finishing dry and clean. Serve at 8 to 10 degrees.

Pour it with oysters, prawns and grilled white fish, where its acidity and low weight keep everything fresh. It also works as an aperitif and alongside green salads, goat cheese and lightly dressed vegetables.
