Description
The Pérez-Pérez siblings make Ingobernable from Garnacha Tintorera in the D.O. Jumilla, in Murcia, southeast Spain. Garnacha Tintorera, also called Alicante Bouschet, is a teinturier variety with red flesh as well as red skin, giving deeply coloured, full-bodied wines. Jumilla's hot, dry Mediterranean climate, high light intensity and poor limestone soils ripen the grape fully, pushing alcohol to 15 percent and concentrating dark fruit and spice. Farmed naturally and with respectful agriculture, the wine is aged twelve months in oak barrels and a further two months in clay jars, the latter adding gentle oxygenation and texture while keeping the fruit fresh and the profile savoury. The colour is dense and opaque. The nose is intense, with dark plum, ripe red fruit, black pepper, liquorice and a balsamic, herbal edge. The palate is full bodied and warming, with ripe tannin, dark-fruit concentration and a long, spicy finish. Serve at 17 degrees and decant ahead. It suits grilled and stewed red meats, lamb and richly spiced dishes.
