Divina Proporcion makes Platon in the Toro D.O. from the native Tinta de Toro. Twenty months in oak give a deep, powerful red of black plum, dark cherry, cocoa and sweet spice over firm tannin.
Description
Platon comes from Divina Proporcion, a family winery in the Toro Denomination of Origin in Castilla y Leon, founded to express the native Tinta de Toro, the local strain of Tempranillo. Toro lies on the high plain of the Duero, with a harsh continental climate of hot days, cold nights and little rain. The vines grow on poor, sandy and stony soils, often ungrafted, which keep yields low and produce small, thick skinned grapes. That thick skin and the strong sunlight give deep colour, ripe dark fruit and firm tannin, while the wide day to night temperature swing preserves freshness even at a ripe 15 per cent. The wine ages 20 months in barrel, where oxygen exchange rounds the tannin and adds cocoa, vanilla and toast. The colour is dense, dark red. The nose layers black plum, dark cherry, dark chocolate, liquorice and sweet spice. The palate is full and powerful, with ripe, structured tannin, dark fruit and a long, spiced finish. Serve at 16 to 18 degrees and decant an hour ahead. It is built for hearty meat dishes such as roast beef and lamb.
