Description
Distilia bottled this single cask Diamond from 2003 in its The Last Cask series, with 19 years of age. The Diamond Savalle still gives a clean, toffee-led base, and nearly two decades in oak have built it into something dark and well-rounded rather than light.
Matured in ex-bourbon and bottled at 59.1% cask strength, it is dry and woody but generously fruited: caramel, dried fruit and dark chocolate lead, with coffee, roasted wood and a touch of orange peel behind, closing long. The ex-bourbon ageing lends a polished, almost vanilla-edged sweetness that keeps the high proof in balance. This is a serious evening sipper in the dry, chocolate-and-caramel Diamond mould, suited to drinkers who already enjoy mature Demerara at full strength, taken neat with time.
