Dillon Canne Bleue (Kann Blé)

Dillon distils in Martinique from fresh-pressed sugar-cane juice, and Canne Bleue is a single-variety blanc made from blue cane, a bottling style that highlights the character of one cultivar. As an unaged Martinique agricole it sits at the blanc tier, made to show cane rather than wood.

The nose is fresh, round and lightly sweet with a fruity edge, but the palate stays true to the dry agricole template, oily and bright with citrus, sugar-cane and a cooling mint note. The finish keeps that oily, citrussy character and adds a touch of liquorice. Bottled at 50% and unsweetened, it is clean and snappy, the kind of single-cane blanc made for Ti' Punch, where the lime and cane syrup let the variety's freshness come through.
