Description
Dillon Brut de colonne is a white agricole from the Dillon estate in Fort de France, drawn off the column at its natural distilling strength rather than reduced with water. Brut de colonne is the rawest way to meet a cane juice spirit, capturing the still output before any cellar softening, and it sits firmly in the unsweetened French island tradition.
Like all agricole it starts from fresh pressed sugar cane juice, not molasses, run through a tall copper column kept deliberately low to hold onto the grassy, vegetal congeners that define the style. The result is intense rather than aggressive, opening on fruity cane, lime and floral, herbal lift before peppery, anise and nutmeg warmth carries a dry, sugarcane finish. At this strength a few drops of water unlock it, and it makes a vivid, snappy Ti Punch.
