Description
Dievole is a long-established estate just twelve kilometres from Siena, overlooking the Chianti Classico hills where wine has been made for almost a thousand years. This is its classic Chianti Classico, built on organically farmed Sangiovese with the traditional companions Canaiolo and Colorino, which add perfume and colour to the blend. The estate's hillside vineyards sit on heat-retaining, well-draining Tuscan soils that ripen Sangiovese fully, while the elevation and cool nights hold the acidity that gives the wine its freshness and lift. The wine ages thirteen months in barrel, enough to soften the tannins and add a light frame of spice through slow oxygen exchange while keeping the fruit and acidity in the lead. The colour is medium ruby. The nose offers red cherry, raspberry and plum, with dried herbs, tobacco and a savoury, earthy note that marks the appellation. The palate is medium-bodied and fresh, with fine tannins and bright acidity that carry a clean, savoury finish. It is approachable now and will hold for several years. Serve at 16 to 18 degrees. It is a natural partner for tomato-based Tuscan cooking.
