Description
Dievole farms in the hills between Siena and Florence, in the heart of Chianti Classico, where this white is made from Trebbiano and Malvasia. The site is classic inland Tuscany, with hillside vineyards on the region's calcareous clay soils and a wide day-to-night temperature range that keeps acidity firm in a warm climate. The wine is organically farmed and aged twelve months in oak barrels, a long ageing for these grapes that builds a rounded, textured mouthfeel: slow oxygen exchange through the barrel adds vanilla and a nutty, toasted depth, while lees contact rounds the palate and softens the acidity. The colour is bright gold. The nose shows white peach, pear and lemon over almond, beeswax and a light vanilla oak note, and the palate is rounded and dry, carrying ripe orchard fruit and a savoury, nutty edge into a firm, mineral finish. Serve at 10 to 12 degrees in a wide glass.
