Venus La Universal makes this Montsant rosé, Dido La Solució Rosa, from a field blend of red and white varieties, aged 16 months in old French oak. It is deep, structured and savoury, showing red fruit, dried herbs and a spiced, oaked depth.
Description
Dido La Solució Rosa comes from Venus La Universal in D.O. Montsant, in southern Catalonia, where the winery farms organically on the schist and clay soils that ring the Priorat hills. This is an unconventional rosé, a co-fermented field blend of red and white varieties: Garnacha Tinta, Tempranillo, Cariñena, Macabeo and other whites. Slow fermentation and 16 months of ageing in used French oak barrels set it apart from the pale, fresh rosé style. The old barrels add no fresh wood flavour but allow a slow oxygen exchange that builds texture, softens the structure and brings a savoury, spiced depth, while the long ageing knits the components together. The colour is a deeper pink. The nose shows red cherry and plum with dried herbs, a touch of vanilla and an earthy undertone. The palate is broad and textured, the fruit carried by real structure and a savoury, lightly oxidative edge that gives the wine weight and grip. The finish is long and dry. This is a rosé for the table. Serve at 12 to 14 degrees. It suits roast pork, poultry and mushroom dishes.
