Description
Desig comes from the DO Penedès in Catalonia, made by Ramon Jané from a single Xarel·lo vineyard planted around 1977 at Les Gunyoles de Avinyonet, near the Mediterranean coast. The vineyard is worked organically and biodynamically, with no chemical fertilisers or pesticides and soils fed by decomposing plant matter, which favours deeper roots and even ripening in the warm Penedès climate. Xarel·lo is the backbone grape of the region, valued for its acidity and phenolic grip. The fruit is hand harvested into small 15kg crates, then given a cold maceration to draw skin aromatics before pressing. The wine rests seven months on its fine lees in stainless steel, where autolysis and periodic stirring build texture and a subtle savoury depth while keeping the fruit fresh and the colour pale. Expect a bright lemon and green apple nose with pear, white flowers and a faint herbal edge. The palate is dry and mineral, with a saline, stony finish held by firm acidity. Serve at 9 to 11 degrees in a white wine glass.
