Description
Desdeya Uno is a Tequila Blanco of 100% Blue Weber agave from Arandas in Los Altos, the highland plateau of Jalisco whose iron rich red clay tends toward fruitier, rounder, sweeter tequila. The producer states the spirit is additive-free, and its parent company holds B Corp certification, an unusual marker in the category.
The agave is roasted around forty eight hours in a brick oven, milled on a roller, then fermented seventy two hours with a yeast strain isolated in the Burgundy region of France before two distillations in a 3,500 litre copper alembic. That slow highland bake shows in notes of mandarin, cashew, cocoa butter and the honeyed sweetness of the Altos agave. Bottled at 42% with deep well water, it carries a rich mouthfeel and a long finish, fitting either neat or in a soda highball.
