Description
Derrumbes Tamaulipas is one of the few mezcals exported from the state of Tamaulipas, made in San Carlos by maestro mezcalero Cuauhtémoc Jacquez. It is an ensamble of three uncommon agaves, Arroqueño from the Americana group alongside Univittata and Funquiana, two of which grow only in this region, giving a mezcal that is sweet, rich and dry at once.
The agaves are roasted together in an underground stone pit fired with black oak, milled mechanically, then fermented with natural yeast in stainless tanks before distillation in a copper pot still and a rest of at least sixty days in glass. Bottled near 45.8%, it leads with vegetal and peppery notes, especially green pepper, joined by citrus, a milky cheese like funk and earthy, mineral depth that reflects its wild and unusual agave mix.
