    Derrumbes Guerrero comes from the regional terroir series that bottles one Mexican state at a time, this one drawn from Coyuca de Catalan in Guerrero and built on Cupreata, the fruity, savoury agave native to that part of the country. Master distiller Israel Ríos Bucio works the piñas in a pit fired with white oak, capturing the earthy character of one of the most biodiverse mezcal regions.
    After mechanical extraction the must ferments with wild yeast in a tinaco, then the spirit is distilled in a hollowed Philippine higuera tree trunk still and rested at least sixty days in glass. Bottled around 44.5%, it shows roasted poblano and green pepper, melon and plum yogurt on the nose, with honey, menthol, sage and a salt water toffee sweetness across a soft, nuanced palate.
