Description
Derrumbes Durango is a joven mezcal made solely from Agave durangensis, the endemic Cenizo of northern Durango, in the remote village of Nombre de Dios. Part of the Derrumbes terroir series, which devotes one bottling to each state, it is the work of maestro mezcalero Uriel Simental and shows the fruity, almost creamy character that marks Durango's signature agave.
The hearts are roasted in an underground stone pit fired with black oak, crushed by hand with an axe, then fermented in underground wood and clay vats. Distillation runs through a hybrid wood and copper still fitted with a neck for external condensation, and the spirit rests at least sixty days in glass before bottling at 45.6%. The result balances summer fruit and a nutty depth against dry minerality, closing on a light, clean smoke.
