Description
Depaz sits at the foot of Mont Pelee on Martinique, distilling since 1917 on volcanic terroir, and this 2003 single cask is the house showing mature, polished form. It is distilled from fresh-pressed sugar cane juice on a creole column and aged in French oak, a more refined, spice-led wood than the usual ex-bourbon.
Thirteen years of tropical maturation gives depth beyond the figure, the French oak lending a noble, dry structure. The nose is woody with caramel, pear and vanilla, the palate carrying ripe red apple, cherry and dried fruit over the oak with vanilla and spice, and the finish staying woody and peppery with dried fruit and a return of sugarcane. Unsweetened and bottled at an approachable 45%, it is a dry, elegant sipper best taken neat, and one that drinks well above its modest price.
