    Denavolo is a small hillside estate in Emilia-Romagna founded by Giulio Armani, named after the mountain that overlooks it. Dinavolo is a blend led by Malvasia di Candia Aromatica with Marsanne, Ortrugo and an old local variety, grown on clay and stony soils farmed with respect for the environment using only copper and sulphur. Armani makes his white grapes the way most producers make reds, fermenting and macerating on the skins for an extended period. That long skin contact extracts tannin and phenolics from the aromatic grapes, building structure and the wine's amber colour while carrying through Malvasia's perfume. The wine then rests for eight months on its lees in stainless steel, where yeast contact adds texture and savoury depth without overt oxidation. The colour is amber. The nose is aromatic, with apricot, orange peel and dried herbs over almond, beeswax and a touch of earth. The palate is dry and textured, the tannin present but fine, the finish long, herbal and savoury. Serve at 12 to 14 degrees in a wide glass.
