Dehesa de los Canónigos makes Solideo in Ribera del Duero from Tempranillo and Cabernet Sauvignon with a little white Albillo. Twenty months in American oak give it ripe black fruit, sweet spice and a firm, structured frame built for the table.
Description
Solideo is a Ribera del Duero red from Dehesa de los Canónigos, a long-established estate in Castilla y León. It blends Tempranillo and Cabernet Sauvignon with a small amount of the white Albillo grape, a traditional local touch that lifts aromatics and softens the texture. Ribera del Duero lies on a high plateau where the altitude drives a wide diurnal range, with hot days and cold nights that build colour and tannin while preserving acidity. The poor limestone and clay soils restrict vigour and concentrate the fruit. The wine ages 20 months in American oak barrels, which over that time contribute coconut, vanilla and sweet spice and, through slow oxygen ingress, round out the tannins. The colour is deep ruby with garnet edges. The nose shows ripe plum and black cherry over cocoa, tobacco and toasted oak. The palate is full and structured, with grippy but ripe tannins, dark fruit and a long, savoury finish. Serve at 17 degrees, decanting 30 to 60 minutes ahead, alongside roast lamb, grilled beef or dishes built around mushrooms.
